This beautiful salad is sure to impress! Peaches, plums and cherries are at their prime right now, and will stand up well to grilling. Brie cheese wrapped in parchment, and smoked slightly, then topped with pistachio nuts and a drizzle of honey is served along side. Use organic butter lettuce, peaches, plums, and cherries.
Grill stone fruit in cast iron skillet.
Wrap brie in unbleached parchment paper, and put in cast iron skillet.
Cover grill, and let brie smoke for a few minutes.
Brie should be just slightly oozing.
Make a simple lime, honey, and pink salt vinaigrette.
Assemble salad and drizzle brie with honey and pistachio nuts.
