Peaches, Heirloom Tomatoes & Burrata Salad (Co-op Grocery Shop Inspiration)

images  Britt & I have a love and passion for simple, yet full-flavor seasonal food. Shopping at your local Co-op is a great way to support local farmers, and buy the best seasonal food. Today I went, and got inspired to make a fresh salad with ripe summer peaches, heirloom tomatoes & organic burrata cheese. I sprinkled some pistachio nuts over the top. And I added a drizzle of reduced balsamic vinegar & extra virgin olive oil. A bit of flakey salt & freshly ground pepper finished it off. Keep it fresh…simple…significant!  Peace…Madi

_____I N G R E D I E N T S_____

Serves 4:

8 ounces burrata

1 peach, halved and thinly sliced

2 heirloom tomatoes sliced

1/4 cup balsamic vinegar

2 teaspoons sugar

Flaky sea salt

Course freshly ground pepper

2 tablespoons olive oil for drizzling

basil leaves & pistachio nuts for garnish


_______P R E P_________

Reduce balsamic vinegar with sugar in small saucepan over medium heat for 10 minutes.

Arrange burrata with peaches and tomatoes on plate. Add basil leaves & a few pistachio nuts. Drizzle with balsamic vinegar & extra virgin olive oil. Sprinkle with flakey salt and ground pepper. Enjoy!  *Can serve with baguette.
