Radish Toast and Salmon Cooked Fireside

imagesWhat a beautiful day here in Minnesota! A “balmy” 70 degrees on the second day of November! While everyone is gearing up for the holiday season I say take a step back and savor the moment. Enjoy this lovely autumn weather! So when I got home from work, Madi and I built a fire, and made a lovely dinner fireside. We put together a simple radish toast to snack on while we cooked Salmon in a cast iron skillet over the open flame. Simple whole foods made awesome! Don’t race the season… savor it and all it’s beauty! Peace, Britt & Madi



IMG_0071Farm to fireside radishes, organic unsalted butter, garden fresh thyme and dill, and pink sea salt.

IMG_0085Birch logs soaked in water make a rack for the skillet. A little thyme butter is heated before placing on fire.

IMG_0089Sprinkle salmon with a little fresh dill, pink sea salt and pepper.


Lay on a bed of baby lettuce and top with chive blossoms. They were still blooming in the garden!!!
