Smokehouse Cider Slaw Hot Dogs & Pickled Onion, Pepper and Cucumber Dogs (Dogs and Brew for Labor Day)

imagesHot dogs are having a celebrated moment. So for Labor Day I decided to open a beer and create some dogs for this celebration. Today I am alone, enjoying a quiet moment in my kitchen. Just me and my camera—concocting flavors—not knowing what the final outcome will be. I pulled out my mandolin and  slivered the farm fresh veggies of summer, and boom: something beautiful, magical, and new was happening. The first Dog is smothered in a Smokehouse Cider Slaw I created. For my other creation, I pickled some cucumbers, red onions and peppers from the farmers market. Hot Dog with Smokehouse Cider Slaw

Thinly sliced radishes add a peppery crunch.

Pickled peppers, onions, and cucumbers add just the right bite.

Cheers and Goodbye to summer and its special memories….

 

Smokehouse Cider Slaw:

Using a mandoline shred…

Kohlrabi

brussels sprouts

broccoli

Kale

red cabbage

carrots

In a blender mix…

2 Tablespoons Cider vinegar

6 Tablespoons Salad oil

1 teaspoon Smoked Paprika

1 teaspoons chopped Green Onion

1 Tablespoons Brown Sugar

1 Tablespoons Honey

1 Tablespoons Brown Mustard

Pinch of Red Pepper flakes

Mix with slaw, let sit an hour.

 

Pickled peppers, onions, & cucumbers:

½ cup red wine vinegar
2 tablespoons sugar
1 tablespoon kosher salt
½ cup water

Toss with veggies and let sit at room temp for 1+ hour
